There are a few templates that you'll have to utilize, two being the most significant:

Here's a few things you'll want to customize in your files before you save them as templates:

NOTE: Ensure Part Templates have no features, and Drawing Templates have to Parts, otherwise everything that uses that template will need to have it deleted
For when you want to quickly double-click a note in the Title Block to edit its contents, you may define those fields
To create a Title Block Field:
RMB→Edit Sheet Format→Title Block Fields→Select the Note Fields→Check-it-out→RMB→Edit Sheet→DBL-LMB (the field)→Type desired information
It is important to remember that Title Block Fields are generally not tied to parametric file properties and aren't tied to the Parent-Model or the Drawing itself. It's often preferred to set properties that drive the Title Block via the Parent-Model using the custom property tab
By default, SolidWorks places the templates here
You should have your own templates folder
Tools→Options→File Locations→Document Templates→Add→navigate to appropriate folder→Select Folder→OK
Select "Prompt user to select document template" otherwise it will default to the option in the above field

It is not uncommon for drawings to have multiple sheets. In these cases you'll usually want a different title block for the header sheet versus any subsequent sheets.
To utilize this, create your Header Title Block, save that sheet format
Now trim that down the to necessary information for subsequent sheets and save that format as a different .slddrt that can be applied to Sheets 2 etc.
